Thanks to kevinbakon08 I now know you can format text. Change color style even background color of text messages and this text seems viewable on the majority of phones.
I did however notice that there is a small glitch with the background colors dark cyan is more like absinth green than any kind of blue! check it out! A am a visual artist so color acuity is important to me.
From left to right:
Dark green, dark cyan, Bright green, Light cyan

Yeah. I was a phone noob when I first came to this site. I found alot of basic info I would not have learned otherewise so I am posting for all those other phone noobs out there so they learn too.

While creating a text message, but before you type the text you want to format, select the button, select "Format Text" then select what you want to modify then type your message.  In the example used above, the "Text Color" was changed to "Bright Red" and the "Background" was changed to multiple different colors.
